The first step in pasta cooking is to fill a large sized pot with sufficient water to cover the pasta and allow for double the expansion if it is fresh, so it will not stick together when it is cooking. Home made pasta, refrigerated pasta and frozen pastas do not require the amount of water that dried pastas need . With dried pastas you will need triple the amount of water that it takes to cover the pasta due to expansion.To make the pasta water boil quicker you can cover the pot with the lid. Now just before you add the pasta to the water, put a tablespoon of oil in to the water. This added oil will prevent the pasta from getting sticky when you take it off the fire.
Adding some salt to taste in the pasta water will give your pasta cooking a firmness and flavor. Put the pasta into the water only when the water is at a full boil. This will keep the amount of time that your pasta has to cook to a minimum. Then return the pot to boiling and let it cook on a rolling boil.To separate the individual strands use pasta ladle fork or a wooden spaghetti server pasta spoon, pasta tongs, fork soon after you have let the pasta slide into the water.
